Flip the bread over, immediately transfer the skillet to the oven, and bake for 10 minuets. the toast will puff up-like a soufflé. while the French toast is in the oven you can make the Bananas Foster Syrup.

Bananas Foster Syrup (optional but recommended!)

In a large sauté pan over medium heat, stir together 3 T unsalted butter, 1/2 cup brown sugar, !/2 cup maple syrup, 1 T dark rum, and 1/4 t cinnamon. When the mixture is syrupy, add 11/2 cup of sliced bananas cut into 1/2 thick slices, and 11/2 cups pineapple chunks. Toss fruit in syrup just until heated through, 1 minuet. Spoon over French toast and garnish each serving with 1 T chopped toasted pecans and powdered sugar if the syrup isn't sweet enough for you.

This recipe can be doubled or reduced as necessary, but always bake the toast or it will be flat.
